These fluffy whole wheat pancakes with a touch of vanilla and a sprinkling of chocolate chips are my secret weapon. They are my most prized bribe. When I make these for the monkeys I can pretty much get my way no matter what I may ask of them. Then again they are addicted to all things dough.
Hey monkeys will you vacuum all of the sand out of the car for me please.
Nope
I’ll make pancakes.
Maybe
Would you spin on your head, with a bird, holding your nose for pancakes?
Uh…NO!
Would you do it for Vanilla Chocolate Chip Pancakes?
Do we have to?
Yep…if you want the special pancakes.
……If that’s the only way we can get them, okay.
You gotta love bribing your kids on occasion in order to get things done or purely for cheap entertainment . I’m just glad that right now all it’s takes is a batch of pancakes. One of these days they will wise up and hold out for something extravagant like a phone or a car. Until then I’ll keep flipping these little beauties. Maybe I’ll even be wise like my friend Kristen and make a stock pile. Then all I will have to do is warm them up, sit back, relax and watch the show.
Gather all of your ingredients together.
In a large mixing bowl combine the flour,baking powder, baking soda, salt and sugar. Combine thoroughly.
In a separate bowl stir together the eggs, milk, oil and vanilla. Add to the flour mixture and combine thoroughly.
Ladle approx. 1/4 cup of the pancake batter for each pancake onto a hot, buttered skillet or griddle. Enlisting a monkey or two to help out is always a plus and lots of fun.
*Sprinkle chocolate chips on top if desired * Cook until the top is covered in bubbles and the edges look slightly firm. Flip and cook the other side until golden brown.
Pour some maple syrup over that stack of warm fluffy goodness and watch the butter melt. That my friends is the clincher, it pushes the monkeys right over the edge. I’ll admit it, melting butter with syrup puts a big grin on my face as well.
Be it for a bribe or your love of all things dough and buttery, these are definitely worth a try one weekend. Add fruit, nuts or what ever else you may like. As always play around with the recipe have fun with it and make it your own.

2 1/2 teaspoons baking powder
